Soybean proteins are under-represented in sulfur containing amino acids. Improving the sulfur amino acid content requires a detailed understanding of the sulfur biosynthetic pathway. Manipulating the expression levels of O-acetylserine (thiol) lyase, a key enzyme that catalyzes the formation of cysteine, can lead to an increase in sulfur amino acid content of soybean seed proteins.
