Fig. 2. Technology Curve/Avidin Expression. The expression of avidin was determined each year following a series of technical improvements. The expression represents mg of avidin/kg of grain. The level of accumulation needed for specialty products, pharmaceuticals, industrial enzymes, and polymers is approximated by their position on the graph.
